Here is a simple mid-week recipe for minestrone with a refreshing blend of flavors.
I made this tonight and it was really good and easy to fix. It;s perfect for out New Orleans' weather this time of year when it is "summer" one day and "winter" the next :-)
Helpful Hints
- Buy good quality Parmesan cheese and ask the market to grate it for you or chop it in the food processor. Freeze extra for quick use. You can quickly spoon out what you need and leave the rest frozen.

- While soup simmers, boil pasta.
