Seasonally, Brussels sprouts are the latest of the cole crops to make their appearance, gaining sweetness as temperatures dip. Packed with fiber and protein, Brussels sprouts are a good source of vitamins C, A and K, and of course being a dark leafy green, are a good source of folate. When combined with whole grains, they make a complete protein! In the United States, Brussels sprouts production actually began in Louisiana, having been brought over by the French (neighbors of Belgium) in the 18th century. Brussels sprouts are best when the leaves are tightly compacted and sprouts are a bright, dark green. As with most veg, roasting is a simple way to really bring out the tasty sweetness. Pro tip: roast small sprouts whole, but halve or quarter larger ones for more even cooking. Add a tablespoon of water to the pan and cover with foil to roast and steam them at the same time for perfect toothsome results all the way through.
