Each November, the New Orleans Jazz & Heritage Foundation celebrates Louisiana's most iconic food with the Treme Creole Gumbo Festival. Emerging from 18th century Louisiana, gumbo's evolution was shaped by African, French, Spanish, Native American, Caribbean and German influences. It truly symbolizes the melting-pot nature of New Orleans.
Here, we reprise several different kinds of gumbo from our collected recipes. These only scratch the surface of contemporary varieties available at this month's festival.
