I’m taking some time to type up this recipe today because I have literally made energy bites probably 20 times in the last few weeks for groups and classes. They are delicious and so easy because they are NO BAKE. Omega-3 fats, fiber, as well as protein and carbs all combine perfectly to give you an energy boost!
ALSO, be sure to use this mini scoop to scoop them into ice cube trays ( I use these ones with lids!) and then put them in the freezer for 20 minutes. I PROMISE that the scoop and ice cube trays make it so much easier. If in a pinch, you can use your hands to roll them into balls, but I find it to be a big pain. I’d rather leave them in a bowl in the fridge and eat from a spoon than have to try to make little balls out of all of them, ha! They pop right out of the ice cube tray really easily.

Energy Bites Recipe with Julie's Tips!

Cuisine: Quick and Easy!
- 1 cup oats
- ⅓ cup coconut
- ½ cup ground flaxseed
- ½ cup chocolate chips or raisins, optional
- ½ cup peanut butter
- 2 Tbsp chia seeds
- ⅓ cup honey
- 1 tsp vanilla extract
- Stir together ingredients. Use mini cookie scoop to scoop cookies onto cookie tray or ice cube tray. Place in freezer for 30 minutes to set, then put in container and store in fridge or freezer.
