Mediterranean Diet vs. Plant-Based Diet Survivor Cooking Class Recipes!

On March 10th, I taught another one of my Cook to Thrive! survivor cooking classes with the help of Cancer Dietitian Lora (formerly known as Intern Lora!).
Turns out, it was the “last class before coronavirus canceled everything”! Since then I have been working to transition the our Cancer Services education and survivorship team to deliver information all from online and phone.
For Cancer Services, I have also been working to create weekly emails that offer our clients science based updates regarding the public health crisis, as well as ideas on how you can stay well at home.

Back to cooking class!

Whenever I teach cooking classes, I have all the intentions in the world to post the recipes on my website and sometimes don’t get around to it. At the bottom of this post, I will share the links for the previous classes I did. I believe I am missing a few recipes, but many are up!
For this class, we discussed what the Mediterranean diet (AKA the “Med Diet”, if you’re hip!) is, and also how it fits and functions as one option for eating a Plant Based Diet.

Basically for the Med Diet, it is recommended to build your food pattern on fruits, vegetables, beans, nuts, seeds, whole grains, fish, olive oil and other healthy fats. So our recipes followed this theme!

The Med-Tuna Salad is made out of all shelf stable products! A great “pantry recipe” to have when you aren’t able to get to the grocery store right away. Be sure to stock up with these ingredients!

Roasted Squash Soup

We loved this soup because all you do is roast the veggies, and then blend. You don’t even have to get a pot dirty! You do need a blender though. : – )

Many of you may know this as “carolina caviar” or “cowboy caviar” but since it fits the same style of ingredients as the Mediterranean diet, I went ahead and re-named my version to Med-South Caviar! If you haven’t heard about a Med-South Diet, UNC Chapel Hill actually did a study showing that it is a nutritious eating pattern!
