Dog Days of Summer | July 23, 2018

FRESH & LOCAL:

Dog Days of Summer

One of the gems of summer, foraged golden chanterelles are now in full swing. Find them at vendors like Johndale’s Farm, Amorphous Gardens, and Mendez Farm but come early because they go fast. Among the most commonly eaten of wild mushrooms, they love the heat and humidity of Southeastern Louisiana at this time of year. Chanterelles are a specialty mushroom with a rich, earthy flavor ranging from woody to spicy. With their most flavorful compounds being fat soluble, get the most out of a chanterelle in a rich and creamy sauce or sauteed in butter.
While the chanterelle season is fleeting, we are excited to see some new and returning mushroom vendors on the scene. Soggy Bottom Gourmet Mushrooms has joined the Rivertown Market, and can sometimes be found at Tuesday or Thursday markets with pink, blue and elm oyster mushrooms and other specialty mushrooms. James Shoop of Screaming Oak farms with oyster mushrooms and whole fresh chicken anticipates his return to Thursday markets in mid August, and a whole new crop of mushroom cultivators are popping up all over the state, bringing more mushroom potential to market. We’ll keep you posted with developments, but aim to get a full selection of mushrooms in all of our markets in the coming months.

VENDOR OF THE WEEK:

Peeps Farms

Joe and Elda Trombatore know one thing better than anything else - eggs! Peeps Farm has been with the market since 2015 and have been farming on their 25 acre land since 1983. A common misconception is that chickens are vegetarian, and a lot of the feed available is grain based or totally vegetarian. The Trombatores have approximately 500 free range hens that spend the majority of the day grazing the farm and eating the best grub, which includes grubs, worms and other insects, and enhances the quality and rich taste of the eggs. When Mr. Joe isn’t enjoying his family and friends, you can find him at the Tuesday market shouting “EGGS!” Stop by and say hello on your next market run!

RECIPE OF THE WEEK:

Chanterelle Risotto

Chanterelles are in abundance at the market lately so check out this creamy risotto recipe from Honest Food. As Hank Shaw mentions, &ldquos;chanties” love the summer in the south and pair well with sweet corn and cream. You can find delicious sweet corn from the likes of Indian Springs Farmers Association Co-op, Johndale Farm, Timmy Perilloux, Monica’s Okra World, LA Growers Co-Op and more! Don’t skip the butter - pick some up at Country Girl Creamery or T&R Dairy Farm’s tents (you won’t be sorry!)
